Savory and slightly sweet, this Warm Bacon Dressing takes a cold salad to another level! This simple vinaigrette is a delicious addition to a dinner party salad or to amp up a weekday lunch.
Dice bacon and onion. In a cast iron skillet, brown the bacon.
Add the onion as the bacon is almost completely cooked. Drain any excess fat.
To a microwave-safe dish, add the remaining ingredients and whisk until incorporated.
Microwave for one minute and whisk. Add the bacon and onion mixture, then microwave another minute or until warm.
Notes
You could also make this over the stove but it will require more hands-on time. I like to just pop in the microwave and keep going!If you are not using right away, I like to store in a Mason jar so it doesn’t take up much space in my fridge and it’s easily reheated for next time. Don’t forget to remove the metal lids before heating!
