Saute the celery and onion until the vegetables are tender and turning translucent. Add to the breadcrumb mixture in a large bowl.
To the large bowl of bread and vegetables, mix in chicken broth, sage, pepper and eggs. Allow to rest overnight in the fridge.
When you are ready to bake, transfer the mixture to one 9×13 and one 8×8 casserole dish and bake at 375F degrees for about 2 hours.
The dressing is done when it no longer jiggles in the center and the top is golden brown! Give yourself (and the dressing) plenty of time to bake properly.
