Cube the chuck roast, slice potatoes and carrots, dice the onion... This recipe calls for chuck roast, but reference the link below for substituions.
Working in batches, sear the beef on all sides until browned. Remove to a plate and set aside.
Add butter and sauté the onion and garlic until tender and fragrant - about 5 minutes.
Remove all ingredients from the pot and pour in the Guinness to deglaze. Scrape up browned bits from the bottom with a wooden spoon.
Add all ingredients back to the pot and stir to combine. Cover and simmer on the stove for about 2 hours or until the beef is tender and cooked through.
